I'm starting the 11th week of your 'Winter Training Plan for Endurance Distance Mountain Bikers' and it's been a great experience.

Sounds like a fun filled summer.
The plan I would steer you towards is the 12 hour solo personal record plan. This has some back-to-back training days in it and would prep you for GL in addition to Rim Ride and VT125. It would be the best do it all plan for you.
Between plans I recommend taking a week of short easy riding.
Yah you know what not to do in race week now…yikes.
