I caught a bad chest cold between week 7 and week 8 of the 40+ MTB stage race training program. I missed 3 days of training including week 7’s long rides. Is there any advice on how to modify the coming weeks to catch up? Any advice would be helpful.

Always a bummer to get sick when you are in a good training flow. I recommend dropping the missed workouts and moving on with the plan as-is. Do not make up missed rides. Being sick is not a rest for your body and your best ROI at this point is to focus on being 100% healthy and moving forward with your plan.
