Don't alter the plan.
Training rides over 6 hours in duration spend fitness not build it. In training you should stay in fitness building mode. To do a ride longer than 7 hours will make you less fit and less prepared to compete on your race day.
Training at altitude will buy you a lot more than training longer. Spend your extra time finding rides that go over 10,000 feet in elevation to train on.
