Your stomach is the limiter in this process and there is no way you will be able to match your calorie burn at race pace. Putting that much in your stomach will lead to projectile vomiting. A calorie deficit is unavoidable.
The higher the stress on your body (prime stressors during racing are nerves, exercise intensity, air temp, hydration status) the less your stomach can process.
The goal is to consume as many calories as your stomach can process without any distress. 360 cal/hour is on the upper end of what most riders can consume while racing. 200 cal/hr is a minimum to avoid bonking. Trial and error in training will help you dial in your fueling parameters.
